I know some people where once they find out the ingredients to something, it completely changes their perspective on the dish. They might like it more… they might like it less. I think aioli could be polarizing like this, since the primary ingredients are just egg and oil! Aioli can certainly be dressed up with fun spices and herbs, roasted garlic, or even caramelized onions.
When adding spices and herbs, I recommend adding 1 tsp at a time and tasting your aioli for potency. Add more as needed. If adding additional solid ingredients like garlic, onions, sun-dried tomatoes, etc, I’d start with half a cup at a time and add more as desired. Serve alongside with bread, fresh vegetables, french fries, or any other snacks!
